Liqueur: Christmas Spiced Brandy

List of Ingredients
3 Tbsp. mixed spices (any combination of: broken cinnamon sticks,cracked allspice, cloves, allspice berries, grated ginger root, or fresh nutmeg)
2 juniper berries bruised
1/2 peel tangerine, minced without Pith (white stuff)
2 cups brandy
3/4 cup brown sugar
1/2 cup granulated sugar
1/2 cup water
Recipe
Combine chosen spices, tangerine peel and juniper berries with brandy in a one quart or larger aging container.
Cap and store in a cool dark place, shaking container and tasting once weekly for up to three weeks, until flavor is optimal.
Strain off spices and peel by straining through muslin cloth or coffee filter paper. Re-strain until clear.
Place strained liqueur liquid in clean aging container.
Combine sugars and water in a small saucepan. Heat over medium heat, stirring constantly to combine.
When sugars are completely dissolved, remove from heat and let cool.
Slowly add cooled sugar mixture to liqueur liquid, stir well.
Age an additional 3 to 4 weeks to age and mellow.
