    Coffeecake: Apple Crunch

    List of Ingredients

    1 pkg. Pillsbury nut or cranberry quick bread mix
    1 cup whipping cream
    1 egg
    1 cup chopped Granny Smith apples
    1/2 cup firmly packed brown sugar
    1/2 cup chopped pecans or walnuts
    1 tsp. cinnamon
    1/4 cup butter or margarine, melted


    Recipe

    Preheat oven to 350 deg. Grease and flour a 9-10" springform pan.

    In large bowl, combine quick bread mix, whipping cream, and egg. Stir 50 to 75 stokes until mix is moistened. Spread half of batter evenly in pan. Top evenly with apple.

    In a small bowl, combine brown sugar, nuts, and cinnamon; mix well. Sprinkle half of mixture over the apple; drizzle with 2 tbsp. butter. Drop remaining quick bread batter by rounded Tbsp. over pecan mixture. Sprinkle with remaining brown sugae mixture; drizzle with remaining butter.

    Bake at 350 degrees for 40 to 50 minutes or until toothpick inserted comes out clean. Cool 10 minutes. Carefully remove from sides of pan and cool an addtional 20 minutes before serving warm.

    YIELD: 10 Servings

    High altitude (over 3500 feet) : add 2 Tbsp. Flour to quick bread mix. Bake as directed.
