    Quiche: Crab Quiche 2

    List of Ingredients

    pastry for a 9-inch pie
    2 eggs, beaten
    1/2 cup mayonnaise
    2 tablespoons flour
    1/2 cup milk
    1 6-ounce package frozen crabmeat, thawed and drained or 1 6-ounce can crabmeat, drained
    2 cups (8 ounces) shredded Swiss cheese
    1/3 cup chopped green onions

    Recipe

    Line a 9-inch quiche dish (or pie plate) with pastry. Trim excess pastry around edges. Prick bottom and sides of pastry with a fork. Bake at 400 for 3 minutes; remove from oven and gently prick again with a fork. Bake an additional 5 minutes.

    Combine eggs, mayonnaise, flour and milk, mixing thoroughly. Stir in crabmeat, cheese and green onions. Spoon mixture into pastry shell.

    Bake at 350 for 30 minutes or until set.

    Let stand 10 minutes before serving.

    YIELD: 6-8 Servings
