    Crepes: Caramel Apple-Almond Crepes

    8 crepes *
    3 medium apples, peeled, cored, and thinly sliced
    2 tablespoons butter
    1/4 cup sugar
    2 tablespoons brown sugar
    1/2 teaspoon cinnamon
    1/4 cup sliced almonds
    Powdered sugar
    Whipped cream

    Recipe

    Warm the crepes according to the package directions and keep warm until the apples are cooked. Melt the butter in a large heavy frying pan over medium heat. Add the apples, sugar, and brown sugar. Cook, turning the apples gently to coat for about 6-8 minutes, or until the apples are tender. Mix in the cinnamon and almonds and toss. Place a crepe on a plate and spread a thin layer of the apple mixture over half of it. Fold the crepe in half, covering all of the apple mixture, and then in half again to form a triangle. Repeat with the remaining crepes. Sprinkle with powdered sugar and serve with whipped cream. Serve immediately.

    Makes 4 servings.

    * French Crepes

    3/4 cup all purpose flour
    pinch of salt
    1 cup of milk
    1 egg yolk
    1 whole egg
    1 tbspn. vegetable oil



    Blend liquid ingredients together. Add flour and salt and mix for about 10 seconds. Coat a stick free pan with a little butter. After heating, remove excess butter. Put a spoonful of batter in the pan. Flip when edges begin to brown. Cook for a few more seconds and serve.
