    Eggs: Marino's Special Breakfast Recipe

    List of Ingredients

    3 eggs
    1 link of Italian Sausage
    1/2 cup chopped Bell Peppers
    1 tbsp. chopped onion


    Recipe

    Simmer Italian sausage with an inch of water, in a large skillet for about 20 minutes, or until firm enough to slice. Very little water should be leftover in the skillet. Remove the sausage and add peppers and onions to the drippings left in the skillet.

    Next cut the sausage into an eighth to quarter inch slices, as you saute the peppers and onions with low heat. When you have finished slicing the sausage add it to the skillet, stirring the mixture frequently.

    Briskly whip the three eggs and add it to the skillet, constantly stirring until the eggs set. Arrange the mixture on a platter and serve with toast. Additional serving suggestions:


    1. Melt mozzarella cheese over the top.
    2. Accompany with a cup of marinara sauce.
    3. Garlic toast is a nice touch, in place of toast.
    4. Serve with American Fries on the side.

    YIELD: 1 Serving
