    Pancakes: Eggless Pancakes

    List of Ingredients




    1 cup flour
    1 tablespoon sugar
    2 teaspoons baking powder
    1/4 teaspoon salt
    1/4 teaspoon cinnamon
    1 cup milk
    2 tablespoons olive oil
    1/2 teaspoon vanilla extract

    Recipe



    In a mixing bowl, stir together the flour, sugar, baking powder, salt and cinnamon. Make a well in the center of the dry mixture; set aside.

    In another mixing bowl or glass measuring cup, combine milk, olive oil and vanilla, stirring slightly. Add milk mixture all at once to the dry mixture.

    Stir just until incorporated (batter will still appear lumpy). Pour approximately 1/4 cup of batter onto oiled skillet that has been preheated on medium heat to make small pancakes.

    Allow pancakes to cook on one side for about one minute, or until air bubbles begin to surface. Flip and allow another minute.

    Pancakes will be light and very fluffy.

    Serve with favorite toppings.
