    Quiche: Lois' Breakfast Quiche

    The Inn on Sea Street B&B, Hyannis, MA

    List of Ingredients




    One 9-inch deep dish pie shell uncooked and well chilled
    12 bacon slices
    4 eggs
    2 cups heavy cream
    3/4 teaspoon salt
    pinch of nutmeg
    pinch of sugar
    pinch of cayenne pepper
    1/8 teaspoon pepper
    1/2 cup grated mozzarella cheese
    1/2 grated sharp cheddar cheese

    Recipe



    Fry bacon until crispy. Crumble. Beat together slightly the eggs, cream and dry ingredients.

    Place bacon on bottom of pie shell. Take chill off liquid mixture on stove and add cheese. Pour over bacon. Bake at 425 degrees for 15 minutes.

    Then bake at 300 degrees for 40 minutes or until knife inserted in center comes out clean.
