    Omelets: San Pedro Hammock Breakfast

    List of Ingredients

    .5 oz red onion, diced
    .5 oz red bell pepper, diced
    .5 oz poblano pepper, diced
    1 oz mushroom, sliced
    2 oz diced potatoes, browned
    6 oz eggs, scrambled
    chef`s magic seasoning
    2 oz cheddar cheese, shredded
    1 each flour tortilla, 12 inch
    2 oz chipotle ranchero sauce
    sour cream, to garnish
    fresh parsley, chopped

    Recipe

    In an omelet pan, heat up olive oil and begin to saute the red onion, red bell pepper, poblano pepper, and diced potatoes. Season with chef`s seasoning and continue to saute, add the egg mixture and scramble the eggs all together.

    Place tortilla flat and place half of the cheddar cheese on tortilla, add egg mixture, and wrap in a burrito fashion.

    Spoon the chipotle ranchero sauce over the top and place the remaining cheddar cheese over the sauce. Place in oven until the cheese is melted.

    Garnish with sour cream and fresh parsley.

    YIELD: 1 Serving
