    Fruit: Winter Fruit Compote

    Recipe Introduction

    As a colorful accompaniment to a Holiday breakfast buffet, serve this winter fruit compote with gently warmed slices of our new, festive Holiday Bread.

    List of Ingredients

    1/2 cup sugar
    1/3 cup water
    1/4 tsp vanilla extract
    1 -1/2 tsp fresh lime or lemon juice
    1 Tbsp butter
    1 Golden Delicious or sweet, firm apple, peeled, cored, and cut into 1/2 " cubes
    1 kiwi, sliced in 1/4" thick slices
    1/2 cup cubed, fresh pineapple
    1/4 cup dried cranberries.


    Recipe


    1. Combine sugar and water in a small, heavy sausepan. Add vanilla. Stir over low heat until the sugar dissolves. Boil over high heat for one minute. Cool the syrup completely.

    2. Transfer the cooked syrup to a bowl. Stir in lemon or lime juice. Cover and chill until cold, at least 1 hour or overnight.

    3. Melt butter in skillet over high heat. Add apple pieces and saute' for about 2 minutes or until slightly soft.

    4. Add sauteed apples, plus kiwi, dried cranberries and pineapple to the syrup and stir gently to coat all the fruit. Serve in a small bowl alongside warmed Panera Holiday Bread. *

    * Bread description: "Sweet egg bread glows with honey, golden rains and surprises. One bite offers whole cranberries. The next, semi-sweet chocolate chips. And deep within the soft, even-textured crumb is a mother lode of cinnamon-sweetened apples. The golden brown crust is topped with walnut streusel and sweet white icing."


    YIELD: 4 Servings
