Bars: Crispy Date Bars

Base:
1 cup flour, all purpose
1/2 Cup light brown sugar, packed
1/2 cup butter or margarine
Filling:
1 cup chopped dates
1/2 cup granulated sugar
1/2 cup butter or margarine
1 egg, well beaten
2 cups Rice Krispies
1 cup chopped walnuts or pecans
1 tsp. vanilla extract
Frosting:
2 cups powdered sugar
1/2 tsp vanilla extract
1 ea. 3oz pkg cream cheese, room temperature
Recipe
Heat oven to 375º
Measure flour in a small mixing bowl, add brown sugar and butter. Mix well until crumbly. Press into an ungreased 9 x9 or 11x7 baking pan. (See my notes) Bake at 375º for 10 to 12 minutes or until golden brown.
In a medium sauce pan, combine dates, sugar and butter. Cook over medium heat , stirring constantly, to boiling. Reduce heat and simmer, continuing to stir, for 3 minutes. Blend about 1/4 cup of hot mixture into the beaten egg to temper, return egg mixture to saucepan, cook and stir until mixture returns to bubbling. Remove from heat; stir in Rice Krispies, nuts and vanilla. Spread over baked base and cool completely.
In a small bowl, combine frosting ingredients and beat at low speed until smooth. Spread over the filling in the baking pan. Cut into bars.
My notes: I line my baking pan with foil that extends over the sides of the pan so I can life the completed cookies out before I cut them into bars. They cut and separate cleaner this way.
Also...the filling can be made all by itself. Spread filling into a lightly buttered, or foiled and buttered, pan and cool. Remove and cut into pieces and serve in mini cupcake papers as a cookie or a candy. Optionally, you can roll them in powdered sugar to coat them (less sticky this way!).
