    Blythe Danner's Basic Buttermilk Pancakes

    List of Ingredients

    2 eggs
    2 cups buttermilk 500 mL
    1/4 cup butter, melted (or vegetable oil) 50 mL
    2 cups all-purpose flour 500 mL
    1 tbsp baking powder 15 mL
    1/2 tsp baking soda 2 mL
    1/4 cup granulated or brown sugar 50 mL
    1/2 tsp salt 2 mL




    Recipe

    In a mixing bowl, beat together eggs, buttermilk and melted butter. In a separate bowl or measuring cup, whisk together flour, baking powder, baking soda, sugar and salt; gradually add to buttermilk mixture and whisk until almost smooth.

    Heat skillet or griddle over medium heat; brush with oil or a mixture of butter and oil. Pour about 1/3 cup/75 mL batter for each pancake into skillet. Cook for 2 to 3 minutes or until top of pancake bubbles and underside is lightly browned. Turn over and cook about 1 minute more, or until second side is golden brown.

    Serve immediately or keep in a warm oven while you finish cooking the rest. Serve hot, with butter and maple syrup.

    Makes 14 pancakes.
