    Dennis Franz's Grilled Herb-Crusted Salmon

    Recipe Introduction

    "In 1994, Dennis Franz took a good look in the mirror and decided to cut red meat out of his diet. Coincidentally, that was around the same time the world got a good look at Franz's backside in the shower, when he cuddled with TV wife Sharon Lawrence in the "NYPD Blue" episode "The Final Adjustment." Franz says: "I eat salmon at least once a day, every day, sometimes twice a day. I had some success losing some weight with chicken and fish and, by a process of elimination, my favorite became salmon. So it seems like every day I'll have one meal of salmon."

    List of Ingredients

    1/4 cup green onion or chives 50 mL
    2 tbsp fresh dill, chopped 25 mL
    2 tbsp fresh tarragon, chopped
    or 25 mL
    2 tsp dried tarragon 10 mL
    1 tsp fennel seeds,
    coarsely crushed 5 mL
    1/4 cup whole wheat cracker crumbs 50 mL
    2 tbsp olive oil 25 mL
    salt and pepper
    1 1/2 lb salmon fillet, with skin 750 g
    lemon wedges

    Recipe

    Grilling fish skin side down on a piece of foil prevents the skin from sticking to the barbecue. The fillet may also be placed directly on a greased grill.


    In a small bowl, stir together onion, dill, tarragon, fennel seeds and cracker crumbs. Drizzle with oil and season to taste with salt and pepper; mix well. Place fish, skin side down, on a foil-lined baking sheet. Spread herb mixture over fish.

    To barbecue, transfer fish on foil to a preheated grill over medium-high heat; close lid and cook for 10 to 12 minutes or until fish is opaque and flakes easily when tested with a fork.

    Alternately, bake fish on a foil-lined baking sheet in 450°F (230°C) oven for 10 to 12 minutes. Serve with lemon wedges.

    Makes 4 to 5 servings.
