    Manicotti:
    1 cup flour
    1 cup water
    4 eggs

    Mix flour, water and eggs. Makes runny type thin pancake mixture. Heat skillet - well oiled and blot up excess oil with paper towel. Cook small spoonful of mixture. Make it to run over pan about the size of a saucer. Cook and set aside. These pancakes can be filled.

    Filling:
    Ricotta cheese
    Parmesan cheese
    Small amount of minced parsley
    Pinch of salt


    Mix filling ingredients together.

    Put Italian-type sauce in bottom of a baking dish. Put some cheese mixture in center of pancake, wrap up, folding edges under and put in a layer of tamato sauce. Cover top with additional sauce. Bake until bubbly.
