    "Playing second banana may not agree with some people, but it hasn't given Molly Culver a case of indigestion. In the syndicated action series V.I.P., she plays Tasha Dexter, protection specialist to the rich and famous, and the brains behind the agency's dimwitted figurehead, Vallery Irons (Pamela Anderson). "My job rocks," she enthuses. "I get to blow up the bad guys every day."
    Culver is an avid baker. "One Thanksgiving at my house, I [served] four different pies and half a turkey," she recalls. She says the secret to her pies is making sure to use fresh fruit, and ice-cold water and butter for the crust."

    List of Ingredients




    Shortbread Crust :
    1 1/3 cups all-purpose flour 325 mL
    2 tbsp brown sugar 25 mL
    1/2 cup butter (cold) 125 mL
    1 tbsp water (iced) 15 mL

    Peach Filling:
    5 cups fresh peaches, sliced 1.25 L
    1 tbsp lemon juice 15 mL
    1/2 cup granulated sugar 125 mL
    1/4 cup all-purpose flour 50 mL

    Pecan Streusel Topping:
    1/2 cup all-purpose flour 125 mL
    1/2 cup brown sugar 125 mL
    1/4 cup soft butter 50 mL
    1/2 cup pecans, chopped 125 mL
    1/2 tsp cinnamon 2 mL

    Recipe



    Crust: Using a food processor or mixing bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Add water, mixing until dough holds together. Roll dough into a flat circle, then press mixture firmly into bottom and up sides of a 9 inch (23 cm) deep-dish or 10 inch (25 cm) pie plate; refrigerate until filling and streusel are prepared.

    Filling: Combine peaches and lemon juice; sprinkle with a mixture of sugar and flour; toss to coat evenly. Just before baking, spoon into prepared pie shell and sprinkle with streusel topping.

    Topping: Blend flour, sugar and butter with a fork or pulse in a food processor until mixture resembles coarse crumbs. Add pecans and cinnamon; sprinkle evenly over peach filling.

    Bake in lower third of 400 F (200 C) oven for 15 minutes; reduce heat to 350 F (180 C) and bake 30 minutes longer or until peaches are tender, filling is thickened and topping is golden brown. Test peaches for doneness with the top of a sharp knife. Makes 8 servings.

    Per serving: 460 calories, 4 g protein, 22.5 g fat, 64 g carbohydrate.
