    Chambord Cheesecake

    List of Ingredients

    1 cup graham cracker crumbs
    2 tablespoons sugar
    3 tablespoons butter or margarine, melted
    2 8-ounce packages cream cheese, softened
    1 3-ounce package cream cheese, softened
    1 cup sugar
    1/4 teaspoon vanilla extract
    1/2 cup seedless raspberry jam
    1/4 cup raspberry liqueur
    3 eggs

    Recipe

    Preheat oven to 350°F. Grease a 9-inch springform pan with butter.

    In a medium bowl, combine cracker crumbs, sugar, and butter; mix thoroughly. Press onto bottom of prepared springform pan.

    Bake for 10 minutes.

    Reduce oven temperature to 300°F.

    In a large mixing bowl, beat all the cream cheese until smooth. Add sugar; beat until mixture is fluffy. Add vanilla, jam, and liqueur; beat until blended. Add eggs, one at a time, beating well after each addition. Pour over prepared crust.

    Bake for 1 hour or until center is set. Cool to room temperature. Refrigerate at least 3 hours before serving.

    YIELD: 8 Servings
