    1 envelope unflavored gelatin
    1/4 cup water
    2 8-ounce packaged cream cheese, softened
    1/2 cup sugar
    1 teaspoon vanilla extract
    3/4 cup cold water
    1 9-inch graham cracker crust

    Recipe



    In a small saucepan, sprinkle gelatin over water; let stand for 1 minute. Heat, stirring constantly, until gelatin is completely dissolved.

    In a large mixing bowl, combine cream cheese, sugar, and vanilla; beat until well blended and smooth. Gradually beat in gelatin mixture and water until smooth. Pour into prepared cracker crust. Refrigerate at least 2 hours. Decorate with fresh fruit, if desired.
