    Israeli Chocolate Triangle Cheesecake

    300g curd cheese, or low fat white cheese equivalent.
    150g hard margarine (200g if you use low fat cheese)
    granulated sugar + vanilla essence/vanilla sugar to taste
    lemon juice to taste
    2 packets of NICE biscuits
    2 saucers of milk chocolate frosting to cover
    chocolate drops/desiccated coconut/crushed
    cookies/topping as you wish.

    Blend cheese and marg. together until you have a thick, cement-like consistency. Add sugar, vanilla, lemon, etc. to taste. Chill cheese mixture.

    Lay a double thickness of grease proof paper about 2 ft long on a flat surface or tray. Dip a biscuit briefly into a saucer of milk and lay it horizontally in the middle towards one end of the paper leaving a couple of inches free at the end. Repeat with a second biscuit, and lay this so that the short side touches the short side of the middle biscuit, and repeat with a third biscuit on the other side of the middle biscuit so that you have 3 biscuits in a row with their short sides touching the middle row (making the longest horizontal row you can) and with about 2-3 inches of paper free on each side.

    Repeat this process, but with the long sides of your second row of biscuits touching the long sides of the first row, until you have finished about half the biscuits. You should have 3 columns of about 10-12 rows of softened biscuits.

    Get the cheese mixture, dip another biscuit in milk, and sandwich to a bottom layer biscuit with a small amount (1 tsp. or less) of cheese mixture and continue until you have sandwiched all the bottom row of biscuits to a second layer with cheese mixture. You should have a fair amount of cheese mixture left. Put all the rest of the cheese mixture all the way along the middle column of your biscuit sandwich.

    Carefully take hold of the long edges of grease proof paper, lift up the outer 2 columns of biscuit sandwich, and press them gently onto the middle one that has the cheese mixture on. The outer two columns will stick to the cheese on the middle layer You should have made your triangle, three lots of biscuit sandwich with cheese in the middle. Some cheese may ooze out of the top or ends of the triangle if you had too much left over. Scrape it off with a knife and keep it, makes a great spread.

    Chill or freeze the cake until you need it. (easy to transport this way also). Then unpeel the grease proof paper from the outer sides of the triangle. Cover biscuit sandwiches with chocolate frosting(leave paper on, that way mess goes on paper nowhere else) and topping of choice. Cut away remaining paper, slice vertically and serve.
