    White Chocolate Cheesecake w/Raspberry Sauce

    List of Ingredients

    1 cup white chocolate morsels
    2 8-ounce packages cream cheese, softened
    3/4 cup sugar
    3 eggs
    1-1/2 teaspoons vanilla extract
    3/4 cup sour cream
    2 tablespoons cocoa powder
    Raspberry Sauce (below)

    Recipe

    Place chocolate in a double boiler and heat over hot water until melted. Stir until smooth; cool to room temperature.

    Preheat oven to 325°F. Grease a 9-inch springform pan with butter.

    In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream; beat until blended. Stir in melted chocolate. Pour into prepared springform pan.

    Bake for 25 minutes or until just barely set. Turn off the oven, leave door ajar; cool for 1 hour. Remove from oven and chill. Just before serving, dust with cocoa powder.

    RASPBERRY SAUCE

    2-1/2 cups raspberries
    2 tablespoons sugar

    Reserve 1/2 cup raspberries.

    In blender, purée remaining raspberries; push through a sieve. Stir in sugar.

    Spoon raspberry sauce on to dessert plates. Remove sides of springform from the cheesecake. Cut into wedges. Place on raspberry sauce; garnish with reserved raspberries.
