    List of Ingredients




    * 1 cup flour
    * 1 cup sugar
    * 1/2 teaspoon baking soda
    * 3 Tablespoons good quality cocoa
    * 1/2 cup water
    * 6 Tablespoons butter
    * 1/4 cup whole milk
    * 1/4 teaspoon lemon or lime juice (to acidulate the milk)
    * 1 egg

    Recipe



    1. Preheat oven to 350 degrees Fahrenheit. Grease an 8x8 or 9x9 brownie pan. Acidulate the milk (see below for how to do this).
    2. Melt water, butter, sugar, cocoa, and vanilla together in a medium-sized pan, stirring.
    3. Add flour, and baking soda, stir well.
    4. Add lemon or lime juice to milk, stir to acidulate (thicken)
    5. Stir acidulated milk into cocoa mixture.
    6. Remove pan from heat. Add egg, stirring well to avoid "cooking" it.
    7. Pour into 8x8 or 9x9 brownie pan (for thinner brownies) and bake at 350 degrees Fahrenheit for 20-25 minutes. Brownies should pull away from sides of pan.

    Cool, and cut into squares.

    Makes 6-8 servings.
