Best Ever Meatloaf

Recipe Introduction
Not your usual meat loaf recipe. Try this version and accept the accolades.
List of Ingredients
2 /3 cup milk
2 eggs
3 slices bread, cubed
1 /2 cup chopped onion
1 /2 cup grated carrot
1 cup shredded cheddar or mozzarella
1 T. chopped parsley
1 tsp. salt
1 /4 tsp. pepper
1 1 /2 lb. Ground meat
Topping:
1 /2 cup tomato sauce
1 /2 cup brown sugar
1 tsp. mustardRecipe
n a large bowl, combine milk, eggs and bread; let stand for 5 minutes. Add onion, carrot, cheese, herbs and seasonings. Crumble beef over mixture and mix well.
Pat into greased 8 X 4 inch loaf pan. Bake at 350 degrees for 45 minutes.
Meanwhile, combine topping ingredients. Spoon some of the topping over meat loaf. Bake 30 minutes longer or until meat is 160 degrees. Spoon remaining topping over loaf. Let stand 10 minutes before slicing.
Makes 6 servings.
