Holiday: Chanukkah Symbol Cookies

Recipe Introduction
"These cookies are cut into traditional Chanukah symbols, including menorahs, dreidels, and gelt. Commericial cookie cutters or paper patterns can be used. I have included both a recipe for two dairy cookies and a pareve cookie. The cookies are all prepared the same, the ingredients are just different. The dairy cookies have a mild vanilla flavor, the rich dairy cookies are very rich with a wonderful almond flavor, and the pareve cookies have a nice orange scent."

Dairy ingredients
1/2 cup softened unsalted butter
1 cup sugar
1 egg
2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons milk
1 teaspoon pure vanilla extract
Rich dairy ingredients
1 cup softened unsalted butter
1 cup sugar
2 eggs
2 cups sifted flour
1/2 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons pure almond extract
Pareve ingredients
1/2 cup vegetable shortening
1 cup sugar
1 egg
2 cups sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons freshly squeezed orange juice
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure orange extract
Recipe
Cream the butter (or shortening) and sugar in a large bowl. Beat in the egg(s) until the mixture is very light and fluffy. Add the remaining dry ingredients and liquid ingredients in alternating doses, mixing well after each addition. Chill for at least two hours. Preheat oven to 375 degrees. Roll out on a lightly floured board thinly and cut with symbol cutters. Bake on an ungreased cookie sheet for 7 to 10 minutes. Cool on wire racks and frost if desired. Store in a tightly sealed container.
