    Ethnic: Italian Cookies II

    List of Ingredients

    • 6 eggs

    • 1/2 cup sugar

    • 1/2 cup vegetable oil

    • 2 teaspoons lemon or anise extract

    • 31/2 cups flour

    • 4 tablespoons baking powder

    • Frosting:---

    • Confectioners' sugar

    • Food coloring

    • Colored sprinkles

    Recipe

    Mix all the cookie ingredients together with a wooden spoon until the batter is sticky and shiny. Dust your counter workspace with flour; this will help make the dough workable. Take a small amount of dough and roll it into a log shape about the size of a small finger. Form a knot, like a pretzel, with the dough. Bake the cookies at 375 degrees until the bottoms are golden, about 8 to 12 minutes depending on the oven.

    When the cookies are cool, dip in a light frosting made of confectioners' sugar, water and food coloring, if you wish. Dip the wet frosted cookie into sprinkles and place on a rack to dry. These cookies keep very well and can be made a week in advance if kept in a covered container.
