1/2 cup unsalted butter, at room temperature
1 t. vanilla
1/4 cup powdered sugar
1 cups all-purpose flour
1/2 cup walnuts, finely chopped
1 cups powdered sugar
Recipe
In a food processor or using an electric mixer, beat together the butter, vanilla, 1/4 cup sugar and flour until the mixture holds together. By hand, stir in the walnuts.
Shape the dough into 3/4 inch balls and place about 1 inch apart on parchment paper-lined baking sheets. Bake at 300ƒ for 15-20 minutes. Allow the cookies to cool on pans for 5 minutes.
Next, place the 2 cups of powdered sugar in a mixing bowl. Gently coat each warm cookie in sugar and place on cooling racks. When the cookies have cooled completely, coat the cookies again with powdered sugar.
