    Recipe Introduction

    Here's my favourite molasses cookie recipe. They're soft cookies. I've forgotton where I got the recipe, unfortunately; it was from one of many library cookbooks I've borrowed over the years. These are delicious.

    List of Ingredients

    3-1/2 cups flour
    2 tsp ginger
    1/2 tsp cloves
    1/2 tsp nutmeg
    1/2 tsp allspice
    1 tsp salt
    1 cup molasses (pref. dark)
    1 tsp baking soda
    1/2 cup soft butter
    1 cup sugar
    3 Tbs dark rum
    5 Tbs water


    Recipe

    In large bowl whisk flour, spices and salt. In medium bowl mix molasses and soda (will foam and double in volume).In large bowl cream butter and sugar until fluffy and light in colour (~5 minutes). Beat in the molasses, then the rum and water. Stir in the flour 1 cup at a time, beating well. Cover and chill at least 8 hours or overnight. Roll out on floured board to ~1/2" thickness. Cut with a 4" cookie cutter. Place on greased sheet at least 3" apart. Bake on middle rack at 375° about 10 minutes, or until the tops feel firm to the touch. Remove, let cool 1 or 2 min. Transfer to a wire rack. Store in tightly covered container. Will keep 2 to 3 weeks.
