    Nutty Leprechaun Cookies

    List of Ingredients




    1/2 cup butter or margarine
    1/4 cup firmly packed brown sugar
    1 egg, separated
    1/2 teaspoon vanilla
    1 cup all-purpose flour
    1/4 teaspoon salt
    1 1/2 cups chopped peanuts
    1 can vanilla creamy-type frosting
    Green food coloring
    12 green peanut M&Ms
    12 white yogurt-covered peanuts

    Preheat oven to 350 degrees. Blend butter or margarine and sugar in mixing bowl, stir in egg yolk and vanilla. Add flour and salt to bowl, mix well. Chill 1 hour. Roll into 1-inch balls. Dip into slightly beaten egg white. Roll in nuts. Place 1 inch apart on cookie sheet. Bake at 350 degrees for 5 minutes. Press thumb gently in center of each and bake 5 minutes longer. Cool. Divide frosting in half. Add a few drops of green food coloring to half of the frosting. Fill half of thumbprints with green frosting and half with white frosting. Garnish each with contrasting candy-coated colored peanut.
