    Delicious almond cookie covered in white chocolate and rolled in coconut.

    List of Ingredients




    1 cup(s) softened butter (2 sticks)
    2 cup(s) flour
    1/3 cup(s) white sugar
    2 teaspoon(s) almond extract
    2 teaspoon(s) water
    1/2 cup(s) finely chopped almonds
    24 (toasted) almonds, cut in half
    10 ounce(s) white chocolate, melted
    1 1/2 cup(s) (shredded, unsweetened) coconut
    24 toasted almonds, cut in half

    Preheat the oven to 325F.

    Combine the first six ingredients in a mixing bowl until well incorporated. Roll the dough into very small balls (1 heaping teaspoon), each with half an almond in the center.

    Place on cookie sheet and bake for 15-17 minutes. Let cool.

    Melt white chocolate in microwave or double boiler. Dip balls into chocolate then roll in coconut. Freeze for 10 minutes to firm up.

    YIELD: 48 Cookies
