    Shortbread: Scottish Recipe*

    Put into a food processor:
    1 stick cold butter
    1 cup unbleached flour
    1/3 cup light brown sugar
    1/2 tsp salt
    1 tsp cornstarch
    1 tsp vanilla

    Recipe



    Whirl ingredients in the food processor for about one minute, until the butter disappears. Grease a pie tin, cover the botton with a round piece of parchment paper. Press down dry mixture with a rubber spatula and prick with a fork. Dust the top with sugar. Then score with a knife making 8-slices. Bake in a preheated oven for 50 minutes. Cool well and turn pan over onto a serving plate. Cut through the scored shortbread.
