    Cashew Vegetable Turkey Stir Fry

    List of Ingredients




    1 grilled Turkey Tenderloin
    1/4 cup orange juice
    2 tsp. cornstarch
    1 Tbsp. honey
    1 Tbsp. oil
    1 small onion, finely chopped
    1 minced garlic clove
    1 cup frozen baby whole carrots
    1/2 cup whole cashews


    Recipe



    Cut tenderloin into 1" chunks and set aside. Combine orange juice, cornstarch and honey in a small bowl and mix well. Heat oil in a large nonstick skillet. Add onion and garlic and stir fry over medium high heat for 4-5 minutes until onion is crisp-tender. Add carrots and cover. Cook for 4 minutes longer until carrots are heated, stirring occasionally. Add turkey and orange juice mixture. Cook and stir for 2-3 minutes or until turkey is heated and sauce is thickened and bubbly. Add cashews. Serves 2
