Cajun: Chou Glorieux

1 lg cabbage
2 onions, finely chopped
1 bell pepper, chopped
1/2 cup green onions, chopped
3/4 cup bread crumbs
4 ribs celery, chopped
1/2 pint cream
1/2 stick butter
1 Tbsp oil
4 garlic cloves
3 slice bread, toasted
1/2 lb cheddar cheese, grated
2 Tbsp parsley, minced
salt and pepper to taste

Recipe
Cut the cabbage into fourths and cut out the tough center. Parboil until tender. When tender, drain and slice into small pieces.
Melt the butter in a saucepan or skillet, add the oil, and sauté the onions, green onions, celery, and bell pepper until they are limp. Add the cabbage, cover, and over a very low heat, cook for about 10 minutes, stirring once or twice. Uncover and add all but about 1/4 cup of the grated cheese. Stir well and allow to cook a few more minutes.
In the meantime, soak the toasted bread in milk until soft, then squeeze out the milk, and add to the cabbage . Add the cream, half of the bread crumbs, garlic, and parsley. Remove from the heat and mix well. Add salt and pepper.
Place the mixture in a casserole dish. Mix the remaining bread crumbs and the cheese and sprinkle over the cabbage. Bake in a preheated 350° oven, uncovered, for about 30 minutes.
Serves 6 to 8. Approximate cook time: 40 minutes
