    Dutch: Soft Molasses Cookies ( Stroop Koekjes)

    “ Genuine Holland Recipes,” compiled by the Moonlight Mission Band (Pella, Iowa; 1937)

    List of Ingredients

    4 cups flour
    2 teaspoons baking soda
    1/4 teaspoon salt
    1 teaspoon ginger
    1/2 teaspoon cinnamon
    1/2 cup lard (or butter)
    1/4 cup butter
    1 1/2 cups molasses
    5 tablespoons boiling water
    1 egg


    Recipe

    Sift dry ingredients.

    Measure lard and butter and then melt.

    Add molasses, water and egg. Add to dry ingredients.

    Set out to cool for 1 hour. This dough is soft.

    Handle on well floured board. Roll 1/4 inch think. Cut with cookie cutter.

    Bake in moderate oven at 325 degrees about 15 minutes.
