Recipe Introduction
This recipe is for a traditional cream puff type of dessert that is commonly made to celebrate St. Joseph's Day.
List of Ingredients
Pastry Shell:
1 Cup Pastry Flour
2 Tablespoons Sugar
1/2 Cup Butter
4 Eggs
1 Cup Water
1 Teaspoon Grated Orange Peel
1 Teaspoon Grated Lemon Peel
Dash of Salt
Filling:
1 Pound Ricotta Cheese
3 Tablespoons Sugar
1 Teaspoon Grated Orange Peel
2 Tablespoons Dutch Process Cocoa
2 Tablespoons Creme de Cacao
Recipe
Preheat oven to 400 degrees F. Combine the flour, butter, water, salt, and sugar in a saucepan and bring to a boil. Cook and stir until the mixture pulls away from the side of the pan. Add the eggs one at a time, beating well after each addition. Add a little grated orange & lemon peel. Drop by tablespoon on a baking sheet. Bake for 10 minutes. Reduce heat to 350 degrees F. for another 25 minutes. Allow the cool.
For the filling, mix together the ricotta, chocolate, sugar, a little grated orange peel, creme de cacao. Fill puffs when they have cooled.
