Lebanese: Mujadarra (Lentils)

1 cup lentils, washed
1 teaspoon salt
4 cups water
4 tablespoons olive oil
1 large onion, finely chopped
1/4 cup rice
1/3 teaspoon pepper
Recipe
Cook over medium heat 1 cup lentils in 4 cups water for about 20 minutes.
In the meantime, sauté the onions in oil until lightly browned and add to the lentils.
Add rice and seasonings and cook until rice is done, about 15 or 20 more minutes.
