    Lebanese: Loobyie (Green Bean-Meat Stew)

    Source of Recipe

    Barbara Dooley

    List of Ingredients

    2 tablespoons olive oil
    1 large onion, chopped
1 1/2 pounds of lean lamb cut into small cubes or beef stew meat
    Water
2 pounds trimmed green beans or pole beans
    1-pound, 12 ounce-can tomatoes, undrained and chopped
    8-ounce can tomato sauce
1 tomato sauce can of water
    Salt and pepper to taste
    1/2 teaspoon cinnamon

    Recipe

Heat oil in large, heavy saucepan. Saute onion in oil until limp and transparent. Add lamb or beef cubes and sauté until meat is brown.

Add water to cover meat. Bring to a boil, reduce heat and simmer, covered until meat is tender, about 1 hour.
Stir in beans, tomatoes and their juice, tomato sauce, water and seasonings.

Mix together very well. Bring to a boil. Reduce heat and simmer, covered, until the beans are tender and the sauce is thick.

I serve this over rice for a great one-dish meal.
