    List of Ingredients




    1/4 cup olive oil
    1 qt onion, chopped
    1 qt green bell pepper, chopped
    2 Tbsp garlic, chopped
    2 Tbsp cumin, ground
    1 qt tomato sauce
    1 qt California ripe olives, halved
    2 cups cilantro, fresh, chopped
    2-1/2 qts pink beans*, rinsed and drained
    Habanero pepper sauce, to taste

    Recipe



    Heat olive oil in large heavy pot. Add onions, pepper and garlic. Saute over medium-high heat for 5 minutes. Add cumin to onion mixture. Stir over medium-high heat for 1 minute. Add tomato sauce, olives, cilantro and beans. Heat to a simmer. Simmer for 20 minutes. Add pepper sauce as desired. Adjust seasoning with salt and pepper. Serve with rice.

    *Can substitute light red kidney beans.

    MAKES 24 (6 oz.) SERVINGS
