Spanish: Pork Stew w/Olives, Mushrooms & Green Beans

List of Ingredients
1 1/2 pounds boneless pork loin, fat trimmed off and cut into 1-inch cubes
1 cup chopped yellow onion
4 to 6 garlic cloves, minced
1/2 large red bell pepper, cut into 1-inch pieces
8 ounces mushrooms, thick slices
1 14.5-ounce cans diced tomatoes, with juice (you can use both juice from both cans or just one if you want a more soupy stew)
1 cup chicken broth
1 cup dry white wine
1 teaspoon dried oregano
3/4 teaspoon dried thyme
1 teaspoon sweet Spanish paprika
1 teaspoon salt
Freshly ground black pepper
1 cup pitted kalamata olives, or other good quality black olives
1 pound green beans, trimmed and halved. Blanch before using (or steam for one minute in the microwave)
Cooking spray, or 1 tablespoon olive oil
Recipe
In a large pot, or Dutch oven, heat cooking spray or olive oil over medium high heat. Add pork cubes and cook until browned, about 6 minutes. Add onion, garlic, and bell pepper and sauté until tender, about 5 minutes. Add mushrooms and cook until slightly wilted. If the ingredients are sticking, add a small amount of water.
Add tomatoes, chicken broth, spices, salt, and pepper and blend thoroughly. Cover pot and reduce heat to medium low. Simmer until all ingredients are tender, about 30 minutes.**
Add olives and green beans and simmer covered for about 15 minutes, or until green beans are tender.
Serve over rice.
SERVES 6
** Note: For best results, and if you have time, take the stew off the heat at this point and let everything sit for about 6 hours, or even overnight in the refrigerator. The flavors will really settle in and make the stew really wonderful. If you can’t do this it will still taste great, but you will notice the leftovers are even better!
Additional note: 8 Weight Watchers ® points per serving (53 points for the whole recipe), using cooking spray, not olive oil. This does not include points value for the rice. I used the Weight Watchers ® recipe builder to calculate the points. This is not a WW recipe, but I wanted to figure it out because I love this stew!
