Lebanese: Tabooley (Tabouli - Cracked Wheat Salad)

List of Ingredients
1 cup fine burghol (bulgar)(cracked wheat)
5 bunches of parsley, stemmed and finely chopped
1 onion, finely chopped
1/4 cup fresh mint, finely chopped
4 pounds of tomatoes, chopped (these should be summer tomatoes to make this salad wonderful)
1/4 to 1/2 head iceberg lettuce (depending how much lettuce you want in it)
1/2 cup fresh lemon juice
1/4 cup olive oil
Salt and pepper to taste
Recipe
Soak the burghol in water to cover. It will expand greatly. After 30 minutes, squeeze the burghol with your hands to drain it, and place it in a bowl.
Chop the tomatoes on top of the wheat, that gives the wheat extra flavor. Add the remaining ingredients and mix well. You might have to add a little more lemon juice and oil depending on your taste buds.
NOTE: I have a hard time giving exact ingredients, because I really cook by taste.
