Ukrainian: Poppy Seed Cake

3/4 cup poppy seeds
1 cup milk
1/2 pound (2 sticks) butter
1 1/3 cups light brown sugar
3 eggs
2 cups unbleached white flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
1 teaspoon lemon rind
Recipe
Preheat oven to 350F
Butter 2 medium loaf pans
1) Heat poppy seeds and milk together in a saucepan. Remove from heat right before it boils. Let stand until room temperature.
2) Cream butter with sugar. Add eggs, one at a time, beating *well* after each.
3) Sift dry ingredients together. Add alternately with poppy seed mixture, stirring well after each addition. Stir in vanilla and lemon rind at the end.
4) Bake in well-greased loaf pans at 350F for 40-50 minutes, or until cake-tester comes out clean.
YIELD: 2 Loaves
