    "Ukrainians are fond of combined meats, and even their shashlyk calls for a variety."

    List of Ingredients




    1/2 lb. beef tenderloin
    1/2 lb. veal tenderloin
    1/2 lb. pork tenderloin
    1/2 lb. lean salt pork or slab bacon, rind removed
    6 lamb kidneys, fat and membrane removed, halved and cored
    ground black pepper
    paprika

    salt
    6 scallions, halved lengthwise
    2 lemons, each cut into 6 wedges
    2 tomatoes, each cut into 6 wedges

    Recipe



    Cut all the meats into 1-inch cubes and thread them onto six skewers, alternating the different kinds of meat. Sprinkle the meats with the pepper and the paprika, and grill them over glowing coals for 15 minutes, turning the skewers often. Salt the skewers before serving the meats. Garnish with the scallions, lemon and tomato wedges.


    YIELD: 6 Servings
