    Cream of Mushroom Soup

    List of Ingredients




    1 1/2 pounds fresh mushrooms
    3 tablespoons butter
    3 tablespoons flour
    8 cups chicken stock
    3/4 cup heavy cream

    Recipe



    Slice mushrooms and saute in butter for 5 minutes. Sprinkle with flour. Stir and cook one minute. Remove from heat and add 1 cup chicken stock. Stir well and add remaining 7 cups of stock. Simmer 10 minutes. Add heavy cream. Cool quickly and freeze.


    To serve: defrost just enough to remove from container and heat very slowly over direct heat (watch carefully) or over hot water.
