    Creamy Frozen Key Lime Pie

    1 package cream cheese softened
    1 can sweetened condensed milk, 14-oz
    1 cup evaporated milk
    1/2 cup lime juice (approx. 2 limes)
    1 package cookie crumb pie crust

    Recipe



    In a small mixer bowl, beat cream cheese until smooth. Gradually add sweetened condensed milk and evaporated milk; beat until smooth. With mixer on medium speed, add lime juice and beat for 1 minute. Mixture will thicken immediately. Four into pie crust; freeze for at least 2 hours. Let stand at room temperature 10 to 15 minutes and garnish with lime slices.

    I think this recipe originally came from the Carnation kitchens. Sweetened condensed milk is the same as Eagle Brand milk, but most canned milk manufacturers make their own version. After serving, any left over pie must be kept in the freezer.

    Very refreshing and good to serve after a heavy meal.
