Baking intensifies the flavor of the fruits and makes this gingery breakfast dish a fuss-free favorite.
List of Ingredients
1/2 cup dried cherries
1/2 cup water
1 tsp. finely shredded orange peel
1/2 cup orange juice
1/4 cup packed brown sugar
1 tsp. grated gingerroot
5 cups assorted thinly sliced fruit (such as peeled mangoes,
peaches, pears, and/or apples, or unpeeled nectarines)
1 Tbsp. margarine or butter
Orange peel (optional)
Recipe
In a 1 1/2-quart casserole combine dried cherries, water, the 1 teaspoon shredded orange peel, orange juice, brown sugar, and gingerroot. Stir in fruit; dot with margarine.
Bake, covered, in a 375 [degrees] oven for 40 to 45 minutes or till fruit is tender, stirring gently after 30 minutes. Serve warm. Garnish with orange peel, if desired.
