Grilled Pork Tenderloin w/Fruit Chutney

3 pounds pork tenderloin
1 1/2 cups olive oil
1 cup Dijon-style mustard
1/2 cup red wine vinegar
1/4 cup lime juice
1/2 teaspoon red pepper flakes
- Fruit Chutney (recipe below)
Recipe
Place tenderloins in shallow pan. Mix remaining ingredients (except Fruit Chutney) and pour over pork. Cover and marinate, refrigerated, overnight. Remove pork from marinade. Roast tenderloins in a 450 degree F. oven for 20 minutes, or until internal temperature is 155 degrees F. Baste with marinade during roasting. Slice tenderloins and serve Fruit Chutney alongside.
TIP: Boil marinade for 5 minutes to serve over sliced tenderloin, if desired.

---Fruit Chutney: In large saucepan, combine 3 cups cider vinegar, 1 cup water, 1/4 cup diced onion, 1 minced garlic clove, 1 tablespoon grated fresh ginger, 1/2 teaspoon red pepper flakes, 1/2 cup brown sugar, and 1/2 cup raisins. Bring to a boil; add 1 cup pineapple chunks, 2 pared & cubed kiwi fruit, 1 cored & cubed red apple and 1 cored & cubed green apple. Simmer for an hour, uncovered. Stir in an additional 1 cup pineapple chunks, 2 pared & cubed kiwi fruit, 1 cored & cubed green apple and 1 cored and cubed
red apple. Cover and chill. Serve at room temperature.
