    Salad: Grilled Chile Shrimp Salad

    List of Ingredients




    8-ozs large raw shrimp, shelled and deveined
    1/2 cup water
    1/4 cup lime juice
    1 tsp sesame oil
    2 Tbsp minced green onion
    2 Tbsp minced fresh cilantro
    1 dried Habanero chile, rehydrated and very finely minced
    1 clove garlic, minced
    2 cups shredded green or yellow zucchini
    2 cups shredded carrot

    Recipe



    In a non-metal dich place shrimp. Stir together water, lime juice, oil, onion, cilantro, Habanero, and garlic; pour over shrimp. Cover and chill for 2 to 6 hours. To serve, preheat broiler or barbecue grill. Place shredded zucchini and carrot in steamer over simmering water. Cover and steam about 3 to 6 minutes or until tender. drain shrimp; thread on skewers. Broil or grill 3 to 5 minutes or until pink and no longer opaque. Serve shrimp over steamed vegetables.
