    St. Patrick's Day: Gingerbread Loaf w/Applesauce

    List of Ingredients

    1 cup rice flour
    1 1/2 cup flour
    1/2 stick butter, softened
    2 Large egg (beaten)
    2 TBSP ground almonds or almond paste
    2 TBSP candied orange peel
    1/2 cup chopped raisins
    1/2 ts Ground ginger
    1 tsp baking soda
    1/2 cup Sour milk or sour cream

    APPLESAUCE:

    8 large apples, cored,peeled, chopped
    1 cup water
    1 cup sugar
    2 tsp cinnamon


    Recipe

    Sift flour with soda and ginger, mix with rice flour and rub in the butter. Stir in ground almonds, halved raisins and sliced peel. Mix milk or sour cream and well-beaten egg, and mix with the dry ingredients.

    Turn into a well-buttered pan and bake 1 1/4 hours in a moderate oven (375F).

    Put all the ingredients of the Applesauce in a heavy bottomed pot, bring to a boil, then turn down to low heat, cover and simmer gently for 1 hour.

    Check on it every 20 minutes or so, to stir it and make sure it doesn't burn.

    This is absolutely delicious on Gingerbread, or for a tasty snack--it beats store-bought applesauce any day!
