Here's How to Make It in 20 Minutes:
Step 1: cook the lentil, sausage, and spinach stew
8 ounces smoked turkey kielbasa
Vegetable cooking spray
2 cans (19 ounces each) lentil soup
1 package (10 ounces) frozen chopped spinach
1 cup frozen sliced carrots
3/4 cup tomato juice
2 tablespoons Dijon mustard
1. Slice the kielbasa into generous 1/4-inch-thick slices.
2. Coat a medium nonstick skillet with cooking spray and heat over medium-high heat just until hot. Add the sausage slices and cook about 2 minutes, turn, and cook 2 minutes longer, until browned on both sides.
3. In a large saucepan, combine the lentil soup, spinach, carrots, and tomato juice. Bring to a boil over medium-high heat. Add the sausage and mustard and cook for about 8 minutes, until well combined and heated through.
Step 2: prepare the couscous with raisins
2 tablespoons chopped fresh parsley
1 cup water
1/3 cup raisins
1/2 teaspoon ground cinnamon
1 cup plain couscous
1. Chop enough parsley to measure 2 tablespoons and place in a medium saucepan.
2. Add the water, raisins, and cinnamon. Cover and bring to a boil over medium-high heat. Stir in the couscous and remove the pan from the heat. Cover and let stand until the water is absorbed, about 7 minutes.
Step 3: assemble the ambrosia
2 cans (11 ounces each) mandarin oranges
2 ripe large bananas
1/4 cup shredded coconut
Fresh mint leaves (optional)
1. Drain the oranges and place in a serving bowl.
2. Slice the bananas into the bowl and toss gently. Sprinkle the coconut over all. If using fresh mint, rinse and pat dry several large leaves. Tear into pieces and scatter over the fruit. Chill until serving time.
Step 4: serve
1. Fluff the couscous with a fork, then ladle a serving into 4 large soup bowls. Top with lentil and sausage stew. Serve.
2. When ready for dessert, divide the ambrosia among 4 dessert bowls and serve.
