1 cup all purpose flour
1/2 cup shredded bran cereal (such as All-Bran)
1/2 cup toasted wheat germ
1/2 cup old-fashioned oats
1/2 cup cornmeal
1/2 cup sugar
1/2 cup chopped walnuts (about 2 ounces)
1/2 cup dark raisins
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 cup buttermilk
1/3 cup melted butter
1 tart green apple (such as Granny Smith), peeled, cored, coarsely chopped
1 large egg
Recipe
Preheat oven to 400 degrees. Place paper liners in standard muffin cups.
Combine flour, bran cereal, toasted wheat germ, oats, cornmeal, sugar, chopped walnuts, raisins, baking powder, baking soda, cinnamon, ginger and nutmeg in large bowl.
Combine buttermilk, melted butter, chopped apple and egg in food processor. Process mixture until apple is finely minced, about 20 seconds. Pour buttermilk mixture over dry ingredients. Stir until just combined. Spoon 1/2 cup batter into each muffin cup.
Bake muffins until tester inserted into center comes out clean, about 25 minutes. Transfer muffins to rack and cool slightly before serving.
(Muffins can be prepared 1 day ahead. Store in airtight container at room temperature.)
