This recipe is from The Jared Coffin House, built on Nantucket Island in 1845 by a prosperous ship owner.
List of Ingredients
2 cups flour
1 cup sugar
1 ½ tsp. baking powder
½ tsp. baking soda
2 tsp. grated orange peel
1 ½ tsp. nutmeg
1 tsp. cinnamon
½ tsp. ginger
½ cup shortening (to lower fat content substitute apple sauce)
¾ cup orange juice
1 Tbsp. Vanilla
2 eggs, slightly beaten
1 ½ cups fresh cranberries
1 ½ chopped walnuts
Recipe
In a medium bowl mix, flour, sugar, baking soda and powder, orange peel, nutmeg, cinnamon and ginger. Cut in shortening with pastry blender. Stir in orange juice, vanilla and eggs. Fold in cranberries and nuts. Spoon into 18 well greased or paper lined muffin cups. Bake in a preheated 350 degree oven for 25 minutes or until golden. Serve hot.
