    The Iron Muffin

    List of Ingredients




    10 ounces high-gluten flour
    12 ounces pastry or cake flour
    2 tablespoons baking powder
    1 teaspoon baking soda
    2 tablespoons freshly grated nutmeg pods (about 2 medium pods)
    4 eggs
    1 1/2 teaspoons salt
    8 oz granulated sugar
    1/2 cup honey
    1/2 cup buttermilk
    1 1/2 cups half-and-half
    8 ounces melted, cooled unsalted butter
    6 ounces fresh or frozen cranberries
    4 ounces cashew nuts, finely chopped

    Sift the flours, baking powder, and baking soda. Add nutmeg and reserve.

    Combine eggs, salt, and granulated sugar. beat rapidly for 2 minutes. Gradually stir the egg mixture into the reserved dry ingredients. mix in the honey, buttermilk, and half-and-half, stirring until the batter is smooth. Stir in the melted butter, cranberries, and half of the cashew nuts.

    Use an ice-cream scoop to portion the batter into muffin tins prepared with paper muffin cups. Sprinkle the remaining cashew nuts on top of the muffins.

    Bake at 375 degrees for approximately 20 minutes or until the muffins spring back when lightly pressed on the top. Let cool slightly, then remove from the pans.
