    Pineapple: Pineapple Muffins

    List of Ingredients

    One 8-ounce can crushed pineapple(reserve 1/4 cup juice)
    1/2 cup flour
    1/3 cup brown sugar
    1/2 teaspoon ground cinnamon
    1/4 cup plus 2 tablespoons butter, melted and divided
    2 cups flour
    1/2 cup sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 egg, beaten
    3/4 cup milk

    Recipe

    Drain pineapple, reserving 1/4 cup juice; set aside. Combine 1/2 cup flour, brown sugar, cinnamon, and 2 tablespoons butter; stir well. Set aside.

    Combine 2 cups flour, sugar, baking powder, and salt in a large bowl; make a well in center of mixture.

    Combine egg, milk, remaining 1/4 cup butter, and reserved 1/4 cup pineapple juice; add to dry mixture, stirring just until moistened.

    Spoon into non-stick muffin tins (or greased and floured muffin tins), filling half full. Spoon pineapple over batter, and sprinkle with cinnamon mixture.

    Bake at 275F for 30 minutes. Remove from pans immediately.

    YIELD: 16 Muffins
