Savory: Sesame Cheese Muffins

1 tbsp. butter
1 small sweet onion, finely chopped
1 ½ cups all-purpose baking mix (it’s a recipe from Southern Living – they often use short cuts – but just any ole grocery store brand “baking mix” should work)
1 cup (4 ounces) shredded sharp Cheddar cheese, divided*
1 large egg
½ cup milk
1 teaspoon sesame seeds, toasted
2 tbsp butter, melted
Recipe
Melt 1 tbsp butter in a small skillet over medium-high heat. Add onion and saute 2 minutes or until tender, set aside.
Combine baking mix and half of the cheese in a large bowl, make a well in center of mixture (obviously, I’m copying the recipe directly – I’m not so finicky myself)
Stir together onion, egg, and milk, blending well; add to cheese mixture stirring just until dry ingredients are moistened. Spoon into lightly greased muffin pans, filling t20-thirds full. Sprinkle evenly with remaining cheese and sesame seeds; drizzle with butter.
Bake at 400 degrees for 15 to 20 minutes or until golden.
*1 cup shredded Monterey Jack cheese with peppers may be substituted for Cheddar cheese
